Sometimes small, individual cakes are called for rather than a larger one to be cut into portions. However I’m not mad on individual cakes that are all about decorative icing covering bland sponge. Nope, even when my cake preference favours the small in stature I still want a cake of substance. Luckily, friands fit the bill perfectly. They are made with egg whites and ground nuts (probably almonds, maybe pistachio or hazelnuts) and have a light, slightly meringue-like texture but they work well with a wide variety of flavours, and fruits. Originating in France and now very popular in Australia, friands are just right for enjoying at an afternoon tea for two. I have made raspberry and pistachio friands for Valentine’s Day. The colour combination seems right for romance, reminding me of red roses and green leaves.
